Chickpea Tuna Salad
Ingredients
(1) can chickpeas, drained & rinsed
(1) can tuna in water, strained
2T red onion, finely diced
3T celery, finely diced
1T capers
1/4 cup plain Greek yogurt
1T Lemon Olive Oil
1tsp Dijon mustard
Cracked black peppercorn, to taste
Squeeze of lemon, to taste
Fresh dill, to taste
Instructions
1. Drain & rinse chickpeas
2. Strain tuna
3. In a small bowl, combine all except, chickpeas, tuna & dill
4. Once combined, add chickpeas & tuna
5. Sprinkle with fresh dill & enjoy with crackers, in a sandwich or on it’s own!
