Chocolate Olive Oil Cake w/ Raspberry Icing

For the Cake
 
Ingredients:
  • 1 bag of Pinehurst Olive Oil Chocolate Olive Oil Cake Mix
  • 1 cup of Pinehurst Olive Oil Extra Virgin Olive Oil
  • 3 Large Eggs
  • 1 1/4 Cup of whole milk
**Instructions for baking the cake are on the olive oil cake package.
** Note: you will need a 9- or 10-inch springform pan

For the Raspberry Glaze

Ingredients:

  • 2 cups sifted powdered sugar
  • 2 T milk or half and half
  • 2 T Pinehurst Olive Oil Aged Raspberry Balsamic Vinegar
  • Handful of Fresh Raspberries to add to top of cake

Instructions:

Add together all the ingredients for the glaze and whisk until the powdered sugar dissolves.

If it is not the consistency that you want, add more liquid of choice (milk or raspberry balsamic).

Soooo Delicious!
