- 1 lb marble potatoes, washed. For larger potatoes, half or cut into smaller sizes
- 2 T Pinehurst Olive Oil Co. Garlic Olive Oil
- 1 T fresh thyme
- 1 T fresh chopped basil
- ½ cup pitted kalamata olives halved
- 1–2 cups cherry tomatoes halved
- 3 oz. fresh mozzarella cheese cut into fourths
- Salt and Pepper to taste
Instructions
- Preheat oven to 450 degrees
- Toss potatoes in Garlic Olive Oil, then spread on baking sheet and season with salt and pepper
- Bake for 30-40 minutes, or until tender and desired doneness
- For the last 10 minutes of roasting, add olives, tomatoes, basil and thyme
- Remove from oven and transfer to your serving dish. Add the mozzarella to the dish while the potatoes are still warm.
- Serve and enjoy! This is a perfect side dish for to chicken or fish.
