2 boneless skinless chicken breasts
Gluten free breadcrumbs
1 egg, whisked
6-8 oz Plain goat cheese
Small handful of Sun dried tomatoes
1 tablespoon Mama Mia’s Seasoning (sold in store)
Pinehurst Olive Oil Milanese Gremolata Olive Oil
Ingredients
1. Marinate chicken breasts in Milanese Gremolata & Mama Mia’s seasoning for 24 hours
2. Preheat oven to 350 degrees
3. Place goat cheese on a plate, sun dried tomatoes in a bowl, seasoning in a separate bowl, whisked egg in another bowl & breadcrumbs in another bowl to prepare. Pound out chicken using a meat mallet
4. Soak chicken breasts in egg then cover with breadcrumbs & place on a plate
5. Spread goat cheese on chicken breasts then top with sun dried tomatoes
6. Roll up chicken breasts & keep together using toothpicks
7. Bake for 35 minutes
8. Serve with a side of veggies or a salad & enjoy!
