Ingredients
(2) Boneless skinless chicken breasts, cut into 1″ cubes
4 Ripe peaches, sliced
Mojo Seasoning (sold in store)
Pinehurst Olive Oil Ripe Peach White Balsamic Vinegar
Pinehurst Olive Oil Chipotle Olive Oil
Arugula
Shaved parmesan
Microgreens
Instructions
1. Marinate chicken with Chipotle, Peach Balsamic & Mojo seasoning.
2. Soak wooden skewers in water for 20 minutes.
3. While skewers are soaking, whisk together 1 tbsp of Chipotle Oil & 1/2 tbsp Peach Balsamic & set aside.
4. Skewer chicken then peach, alternating until all pieces are used, then grill.
5. In the meantime, make arugula salad with shaved parmesan & micogreens.
6. Once skewers are cooked all the way through, serve next to salad & drizzle all with Chipotle & Peach Balsamic mixture.
