Harvest Salad with Chicken, Figs, and Butternut Squash

Ingredients

  • 3 cups lettuce, I used the butter blend
  • ¼ cup dried figs, sliced into ¼’s
  • ¼ cup goat cheese
  • 1 cup cooked shredded chicken, can use a rotisserie chicken or baked chicken breast
  • 1 cup roasted butternut squash, using this recipe from our Butter Olive Oil section
  • Fig Balsamic
  • Mushroom & Sage Olive Oil

Instructions

  1. Prepare your butternut squash and chicken as needed, leftovers also work perfectly!
  2. Add all salad ingredients to a bowl and mix together
  3. Drizzle the Fig Balsamic and Mushroom Olive Oil over the salad as desired, I generally do about 50/50 oil and vinegar.
  4. Enjoy!

Notes

*Makes 1 large serving for a meal sized salad or two smaller servings as an accompanying side to our Fig flatbread recipe or any other meal!
