Ingredients
(2) medium sweet potatoes
1 tsp ground sage
1 tsp garlic powder
1 tsp ground pepper
1/2 tsp salt
1/4 cup Pinehurst Olive Oil Butter Olive Oil
4 slices bacon
1/4 cup Pinehurst Olive Oil Maple Balsamic
Instructions
Directions:
1. Place skillet in oven while preheating to 400 degrees.
2. Slice potatoes using chopsticks on either side of the potato to prevent cutting all the way through.
2. In a small bowl, add spices & 1/4 cup olive oil & whisk together.
3. Place potatoes in the skillet then brush with mixture. Bake for about 30 minutes.
4. In the meantime, cut up 4 pieces of bacon in a small frying pan & cook almost all the way through.
5. Remove the potatoes from the oven & drizzle with bacon then top with Maple Balsamic & bake until potatoes are fully cooked.
6. Remove from oven, drizzle with more Maple Balsamic, if needed.
I served this with turkey (we were craving a mini Thanksgiving!) but this would be great with a meatloaf, chicken sausage or steak!
