Hot Honey Blueberry Brie Grilled Cheese

Ingredients

For The Compote:
  • 1 pint of blueberries
  • 2 T Pinehurst Olive Oil Blueberry Balsamic
  • 1/2 fresh lemon, juiced
  •  Pinch of sea salt
For The Grilled Cheese:
  • 2 slices of thick sourdough bread
  • 2 T butter, softened
  • 2 to 3 T blueberry compote sauce
  • Thinly sliced brie cheese to cover the bread
  • Hot honey

Instructions

  1. Add ingredients for the blueberry compote to a saucepan and bring to a boil. Once it comes to a boil, let it simmer until it thickens. Stir frequently to avoid burning.
  2. Butter both sides of bread and add one piece, butter side down, to a heated pan. Add brie cheese and blueberry compote and place the 2nd slice of bread on top, with butter side up.
  3. Cook until golden brown on both sides and remove.
  4. Drizzle hot honey over the sandwich and cut in half.
