For The Compote:
- 1 pint of blueberries
- 2 T Pinehurst Olive Oil Blueberry Balsamic
- 1/2 fresh lemon, juiced
- Pinch of sea salt
For The Grilled Cheese:
- 2 slices of thick sourdough bread
- 2 T butter, softened
- 2 to 3 T blueberry compote sauce
- Thinly sliced brie cheese to cover the bread
- Hot honey
Instructions
- Add ingredients for the blueberry compote to a saucepan and bring to a boil. Once it comes to a boil, let it simmer until it thickens. Stir frequently to avoid burning.
- Butter both sides of bread and add one piece, butter side down, to a heated pan. Add brie cheese and blueberry compote and place the 2nd slice of bread on top, with butter side up.
- Cook until golden brown on both sides and remove.
- Drizzle hot honey over the sandwich and cut in half.
