Lemon Bacon Scallops

Ingredients

  • 1 lb fresh scallops, patted dry
  • 1 lb bacon, cut in half
  • Pinehurst Olive Oil Co. Garlic Olive Oil
  • Fresh pepper
  • Lemons
  • Chopped Fresh chives
  • Pinehurst Olive Oil Co. Sicilian Lemon Balsamic

Instructions

  1. Cook bacon until halfway, either in the oven at 400 degrees for 5 minutes or in the microwave for 3 minutes 
  2. Pat the scallops dry using a paper towel, to remove any extra water that may be on them.
  3. Wrap each scallop in a strip of bacon, adding three scallops to each skewer. Leave a small space between the scallops so all sides of the bacon can cook evenly. 
  4. Drizzle Garlic Olive Oil onto cast iron skillet, cook scallops flipping both sides until bacon looks done, about 3-4 minutes per side.
  5. If bacon is not completely cooked, turn the skewers so the bacon side is on the skillet to finish cooking.
  6. Remove from skillet and top with fresh lemon juice, fresh chopped chives and Sicilian Lemon Balsamic. Serve and enjoy!
