- 1 lb fresh scallops, patted dry
- 1 lb bacon, cut in half
- Pinehurst Olive Oil Co. Garlic Olive Oil
- Fresh pepper
- Lemons
- Chopped Fresh chives
- Pinehurst Olive Oil Co. Sicilian Lemon Balsamic
Instructions
- Cook bacon until halfway, either in the oven at 400 degrees for 5 minutes or in the microwave for 3 minutes
- Pat the scallops dry using a paper towel, to remove any extra water that may be on them.
- Wrap each scallop in a strip of bacon, adding three scallops to each skewer. Leave a small space between the scallops so all sides of the bacon can cook evenly.
- Drizzle Garlic Olive Oil onto cast iron skillet, cook scallops flipping both sides until bacon looks done, about 3-4 minutes per side.
- If bacon is not completely cooked, turn the skewers so the bacon side is on the skillet to finish cooking.
- Remove from skillet and top with fresh lemon juice, fresh chopped chives and Sicilian Lemon Balsamic. Serve and enjoy!
