Ingredients

- 2 cans of Cannellini Beans
- 1/3 cup Pinehurst Olive Oil Co. Garlic Olive Oil
- ΒΌ cup Pinehurst Olive Oil Co. Sicilian Lemon Balsamic
- 2 T Fresh Parsley
- 1 small shallot, chopped
- 1 freshly squeezed lemon
- 1 tsp salt, more or less as desired
- 1 tsp pepper, more or less as desired
Instructions
- Start with 2 cans of Cannellini beans, drained, and add to bowl.
- Add Garlic Olive Oil and Sicilian Lemon Balsamic Vinegar.
- Add shallot, fresh parsley, salt and pepper.
- Squeeze lemon on top and toss everything to coat.
- Taste and alter salt and pepper as needed! Enjoy!
Notes
Notes: Can garnish with parmesan cheese if desired. Add your favorite protein to make into a meal. Use as a dressing over arugula or fresh greens.
