Strawberry Balsamic Chicken

Ingredients

  • 3 boneless, skinless chicken breasts
  • 1/2 pint fresh strawberries (for garnish)
  • Feta, to taste
  • Fresh basil, to taste

Instructions

  1. In a shallow dish combine ½ cup chicken broth, ¼ cup balsamic vinegar, 2 tablespoons honey, 1 tablespoon Dijon mustard, ½ teaspoon sea salt, and ¼ teaspoon black pepper.
  2. Whisk until smooth
  3. Add the chicken breasts. Turn to coat evenly, cover & refrigerate for at least 15 minutes (or up to 4 hours) to let the flavors penetrate the meat
  4. Throw them on the grill & serve with a vegetable and/or a salad!
