Stuffed Acorn Squash

Ingredients

2 small acorn squash
Roasted Walnut Oil
Truffle Salt
1lb ground hamburger (this also works GREAT with chorizo for an extra kick!)
Chipotle Olive Oil
Red pepper flakes, to taste
1 bunch kale w/stems removed
1 honey crisp apple, diced small
1/2 cup Dried cranberries
Gravenstein Apple Balsamic
Feta
Salt & Pepper, to taste

Instructions

1. Preheat oven to 350 degrees
2. Cut the acorn squash in half & scoop out seeds creating a space to stuff​
3. Brush with Roasted Walnut Oil & season with truffle salt
4. Bake for 30 minutes
5. In the meantime, ground hamburger in a skillet or frying pan in Chipotle Olive Oil, red pepper flakes, salt & pepper
6. When hamburger is ground & cooked through, add in apples, dried cranberries & drizzle with Gravenstein Balsamic
7. Remove acorn squash from oven & fill with hamburger mix then top with feta cheese
8. Bake for another 15-20 minutes
9. Remove from oven & crack pepper & salt over the squash
