- 12–16 large white mushrooms
- ½ Cup Italian Bread Crumbs
- ½ Cup fresh grated Parmesan Cheese
- 3 cloves minced Garlic
- 2 T chopped Fresh Parsley
- 1/3 cup Pinehurst Olive Oil Co. Smoked Olive Oil
- Salt and Pepper
Instructions
- Preheat oven to 375 degrees
- Clean the mushrooms and remove the stems
- In a large bowl, combine the bread crumbs, grated parmesan cheese, minced garlic, chopped parsley, 3 T Olive Oil and salt and pepper.
- Place a metal rack on a parchment lined baking sheet and arrange mushrooms on rack. This allows for excess water to drip off of mushrooms and results in a more evenly cooked mushroom!
- Use a spoon to fill mushrooms with bread crumb mixture until heaping, and drizzle with a heavy drizzle of Wood Smoked Olive Oil on each mushroom.
- Place the pan in the oven and bake for 15 minutes or until the mushroom filling starts to brown.
- Remove from oven and enjoy!
