- 1 bunch asparagus
- Salt
- Pepper
- 1 cup Grape tomatoes, halved
- ½ 8 oz. package of Mozzarella Pearls
- 1 T Pinehurst Olive Oil Co. Basil Olive Oil
- Pinehurst Olive Oil Co. Traditional 18-Year Aged Balsamic Vinegar
Instructions
- Preheat oven to 425 degrees.
- Snap asparagus ends off, and layer on a parchment lined baking sheet.
- Drizzle with 1 T Basil Olive Oil.
- Sprinkle ¼ tsp salt and ¼ tsp pepper on top to season.
- Roast for 10 minutes.
- Remove and add halved tomatoes and add additional salt and pepper to taste.
- Return and roast for an additional 5 minutes.
- Add mozzarella bites and stir up to soak in flavors and allow the cheese to melt slightly.
- Drizzle with Lavender balsamic as desired.
