Basil Strawberry Chicken Salad w/Feta
Ingredients
Scale
(2) Boneless skinless chicken breasts
Spinach lettuce
Fresh strawberries
Feta cheese
Chopped pecans
For the marinade:
(see Basil Pesto recipe HERE)
**You can marinate the chicken in just Basil Olive Oil, I happened to have the Basil Pesto leftover from another recipe & it turned into a delicious marinade!
For the vinaigrette:
3 T Basil Olive Oil
1 tsp Dijon mustard
1 tsp Lemon juice
Tuscan Farmhouse Seasoning
Instructions
1. Marinate chicken breasts for at least 4 hours, up to 24 hours
2. Grill chicken until cooked through
3. While chicken is grilling, make vinaigrette
4. Assemble salad & enjoy this delicious, fresh spring salad!
