Chicken Sausage, Gnocchi, Sweet Potatoes w/ Maple Balsamic
Ingredients
- 1 package frozen cauliflower gnocchi or regular gnocchi that has been boiled first
- 1 package of cubed sweet potatoes (approximately 20 oz.) or 2 to 3 sweet potatoes, cubed
- 1 T Salt Sisters Tuscan Farmhouse Blend, sold in store
- 1–2 T Pinehurst Olive Oil Butter Olive Oil
- 2 packages of chicken sausage, sliced (any kind but we used Apple Harvest)
- 2–3 cups spinach
- 1 –2 T Pinehurst Olive Oil Maple Balsamic Vinegar
Instructions
Preheat oven to 400 F. Place gnocchi & sweet potatoes in a bowl & toss with butter olive oil, salt, pepper, and Tuscan Farmhouse Blend and toss to coat. Slice chicken sausages into pieces. Place chicken sausage, sweet potatoes and gnocchi to a large sheet pan and spread evenly.
Bake for approximately 15 minutes, remove and stir. Place back in oven for approximately 20 more minutes. Once veggies and sausage are close do done, remove from the oven and add spinach and drizzle the maple Balsamic vinegar evenly over the entire sheet pan. Place back in the oven for another 5 minutes or until spinach begins to wilt. Remove and stir well making sure that the spinach is well combined.
***You could easily half this recipe if only making for two
