- 4 ears sweet corn
- 1 T Pinehurst Olive Oil Co. Chipotle Olive Oil + more for rubbing on corn prior to roasting
- 1 T Dees Bees Honey (Our Local Honey sold in store)
- 2 Chipotle peppers in adobo sauce
- 2 T adobo sauce
- 2 T water
- Salt to taste
- Dried parsley
- Cotija Queso cheese to garnish
Instructions
- Preheat oven to 425 degrees.
- Peel corn and discard the stringy parts. We left the husk on for better presentation, but feel free to discard them also.
- Lightly coat each ear of corn in Chipotle Olive Oil. Place on a parchment lined baking sheet. Roast the corn for 20 minutes per side.
- Add 1 T Chipotle Olive Oil, honey, chipotle peppers, adobo sauce and water in a blender or food processer. Blend until combined.
- Using a brush, liberally brush each ear with the chipotle sauce. Sprinkle with sea salt, cojita queso cheese and dried parsley.
