Chipotle Roasted Corn

Ingredients

  • 4 ears sweet corn
  • 1 T Pinehurst Olive Oil Co. Chipotle Olive Oil + more for rubbing on corn prior to roasting
  • 1 T Dees Bees Honey (Our Local Honey sold in store)
  • 2 Chipotle peppers in adobo sauce
  • 2 T adobo sauce
  • 2 T water
  • Salt to taste
  • Dried parsley
  • Cotija Queso cheese to garnish

Instructions

  1. Preheat oven to 425 degrees.
  2. Peel corn and discard the stringy parts. We left the husk on for better presentation, but feel free to discard them also.
  3. Lightly coat each ear of corn in Chipotle Olive Oil. Place on a parchment lined baking sheet. Roast the corn for 20 minutes per side.
  4. Add 1 T Chipotle Olive Oil, honey, chipotle peppers, adobo sauce and water in a blender or food processer. Blend until combined.
  5. Using a brush, liberally brush each ear with the chipotle sauce. Sprinkle with sea salt, cojita queso cheese and dried parsley.
  6. Enjoy!
