Cilantro Turkey & Sweet Potato Skillet

Ingredients

  • 4 cups of diced sweet potatoes, about 2 potatoes, cut smaller than a typical cubed size
  • 1 lb. ground turkey
  • 1 yellow pepper, diced
  • 1 cup of white onion, diced (about ½ onion)
  • 2 T Pinehurst Olive Oil Co. Cilantro and Onion Olive Oil
  • 1 T ground cumin
  • 1.5 T minced garlic
  • 1 tsp. chili powder
  • 1 tsp salt
  • ½ tsp. ground pepper
  • ½ cup water
  • 1 cup of shredded mozzarella cheese
  • ¼ cup chopped cilantro to garnish

Instructions

  1. In a cast iron skillet or wok, heat Cilantro Olive Oil over medium-high heat.
  2. Add garlic and cook for about a minute, until fragrant.
  3. Add ground turkey and break apart, cooking for 8-10 minutes, until browned.
  4. Add cumin, chili powder, salt and pepper, stir to combine.
  5. Add onion, yellow pepper, sweet potatoes and water. Stir and cover with lid and cook for 10-15 minutes, until sweet potatoes soften. Add more water if needed to make sure turkey doesn’t dry out!
  6. Add additional salt and pepper as needed to taste.
  7. Top with shredded mozzarella and let melt.
  8. Garnish with fresh cilantro before serving, enjoy!

Notes

This recipe is easy to double if needed for a larger crowd! If you do double, the sweet potato cooking time may need an additional 5 minutes making it 15-20 minutes.
