Coconut Mojo Persian Lime Stir Fry
Ingredients
(2) boneless skinless chicken breasts, cut into 1″ cubes
1 yellow onion, diced
1 red pepper, chopped
1 yellow pepper, chopped
1 orange pepper, chopped
1 green pepper, chopped
Brown rice or basmati rice, prepared per package
Pinehurst Olive Oil Persian Lime Olive Oil
Pinehurst Olive Oil Coconut White Balsamic
Salt Sisters Mojo Seasoning (sold in store)
Instructions
1. Marinate chicken breasts in Persian Lime Olive Oil & 1-2 tablespoons of Salt Sisters Mojo Seasoning for at least 1 hour.
2. Prepare rice as directed on box/package. Once cooked, flavor with Coconut White Balsamic.
3. In a large skillet, heat the Persian Lime Olive Oil and add the diced onion. Saute onion until translucent then add cubes of chicken. Cook all the way through.
4. Add all the chopped peppers to the chicken & onion & allow them to steam cook until al dente or to your liking.
5. Add cooked coconut rice to the chicken, onion & peppers, add more Persian Lime Olive Oil and Coconut White Balsamic as needed & Mojo seasoning to taste.
