
Garlic, Bacon & Coconut Orzo Chicken
Ingredients
Garlic Olive Oil
Boneless Skinless Chicken Breasts, marinated in Garlic Olive Oil & cut into 1″ pieces
Salsa di Parma Bread Dip
2 pieces bacon, cut into pieces
Portobello mushrooms, sliced
2 cups chicken broth
1 cup Orzo (sold in store)
1/4 cup coconut milk
About 4 cups kale
Parmesan cheese (optional)
Instructions
1. Marinate chicken in Garlic Olive Oil overnight
2. Cut chicken into 1″ pieces
3. In a large frying pan, add Garlic Olive Oil & heat until warm. Add chicken pieces, Salsa di Parma Bread Dip, red pepper flakes & bacon & saute until cooked through.
5. Remove chicken pieces.
6. Rinse & slice mushrooms, then add to frying pan.
7. Pour chicken broth & orzo into frying pan.
8. Allow orzo to cook through, stirring occasionally.
9. Add chicken back to the frying pan, then top with kale. Allow kale to cook until wilted. Continue stirring occasionally.
10. Coconut milk & chicken broth will thicken into a nice sauce.
