Grilled Peach & Chicken Kabobs

Ingredients:

(2) Boneless skinless chicken breasts, cut into 1″ pieces, marinated
4 Ripe peaches, sliced
Salt Sisters Mojo Seasoning (sold in store)
Pinehurst Olive Oil Ripe Peach White Balsamic Vinegar
Pinehurst Olive Oil Harissa Olive Oil
Arugula
Shaved parmesan
Microgreens 

For the marinade & dressing:

6 T Harissa Olive Oil

3 T Peach Olive Oil

Squeeze of lemon juice

3 tsp Salt Sisters Mojo seasoning


Instructions

1. Make the marinade (which will also serve as the salad dressing, the above measurements are for both) & marinate chicken overnight or at least 4 hours

2. Soak wooden skewers in water for 20 minutes

3. Skewer chicken then peach, alternating until all pieces are used, then grill the kabobs

4. In the meantime, make arugula salad with shaved parmesan & microgreens

5. Once skewers are cooked all the way through, plate next to the salad & drizzle with dressing
