Lemon Orzo Chicken

- 3 to 4 boneless chicken breasts
- 2 tablespoons Salt Sisters Tuscan Farmhouse Blend (sold in store)
- 3 tablespoons Pinehurst Olive Oil Lemon Olive Oil
- 10 oz package of Wildly Beloved Orzo (sold in store)
- 1 package of fresh mushrooms, sliced
- 2 cups fresh spinach
- 32 oz chicken broth
- Fresh grated parmesan cheese
Instructions
- Preheat oven to 375 degrees.
- Season both sides of chicken breast with tuscan farmhouse blend seasoning.
- Heat oven proof dish and drizzle with lemon olive oil.
- Brown chicken on both sides, remove from heat and place aside.
- Add orzo, spinach and mushrooms to the pan and toss with the chicken drippings.
- Add chicken broth to the mixture and stir.
- Add the chicken back to the pan, cover and place in oven.
- Bake for 45 minutes.
- Remove from oven and add freshly grated parmesan cheese.
