Marinated Grilled Zucchini

Description

2-3 medium zucchini, sliced 1/4″ thick
1 whole lemon, quartered
1 tablespoon mustard (any kind that you prefer)
1/4 cup Pinehurst Olive Oil Milanese Gremolata Olive Oil, plus more
1 tablespoon white vinegar
Fresh mint
Fresh basil
1 cup Plain Greek yogurt
1/2 tablespoon Hot honey
Feta cheese


Ingredients

1. In a food processor, add quartered lemon (including skin), mustard, 1/4 cup olive oil & white vinegar. Pulse to combine
2. Next add the fresh mint & basil, pulse until combined
3. Add olive oil as needed to achieve desired texture & continue pulsing
4. Place zucchini in a glass baking dish & spread marinade all over zucchini. Marinate for at least 15 minutes. (There will be plenty of marinade leftover for second step.)
5. Grill zucchini until desired doneness
6. Mix greek yogurt & hot honey together in a bowl
7. Spoon yogurt onto plate & mix in leftover marinade, place zucchini on top of yogurt/marinade mixture then top with feta cheese

Enjoy these unique flavors!

(FYI: Next time I would nix the yogurt & hot honey & just go with the marinade, there was plenty of flavor in just the marinade!)
