Peach Balsamic Bruschetta

Ingredients

  • 4 Large peaches, peeled and chopped into small pieces
  • 1 T Dees Bees Honey (our local honey in store)
  • 3 T Pinehurst Olive Oil Co. Peach Balsamic
  • ¼ cup fresh basil cut into strips
  • Salt
  • Pepper
  • 1 baguette
  • ¼ cup Pinehurst Olive Oil Co. Chipotle Olive Oil
  • 8 oz. Goat cheese

Instructions

  1. In a large bowl, combine peaches, honey and Peach Balsamic. Stir to coat evenly.
  2. Stir in basil and season with salt and pepper to taste.
  3. Cut baguette into ¼”-1/2” slices. Brush both sides of each slice with Chipotle Olive Oil and arrange on a baking sheet.
  4. Broil for 3 minutes, flip and broil for an additional 2 minutes.
  5. Remove from oven, spread each slice with some goat cheese and top with the peach mixture.
  6. Serve immediately and enjoy!
