- 2 Tbsp Pinehurst Olive Oil Co. Chipotle Olive Oil
- 1/2 medium yellow onion, thinly sliced (about 3/4 cup)
- 1lb Salmon
- Salt and freshly ground black pepper
- 2 cloves garlic, minced
- 1/3 cup Pinehurst Olive Oil Co. Peach Balsamic Vinegar
- 1 Tbsp Honey
- 2 cups sliced firm, but ripe Peaches (about 2 medium)
- 1/4 cup thinly sliced Basil
Instructions
- Preheat oven to 400 degrees F.
- While oven is preheating, heat Chipotle Olive Oil in a large skillet over medium-high heat. Add onion and sauté 3 minutes.
- Add the garlic and sauté for 1 minute. Add the Peach Balsamic Vinegar and mix well.
- Add the honey and mix to combine; season with Salt & Pepper, then push the mixture to the sides of the skillet.
- Add the Salmon to the pan, topping the salmon with some of the onion mixture from the skillet.
- Add the Peach slices around the salmon and transfer the skillet to the oven; cook for 15-20 minutes, or until the Salmon is flakey.
- Remove the skillet from the oven when done. Top with fresh basil and serve warm.
