Peach Salmon Skillet

Ingredients

  • 2 Tbsp Pinehurst Olive Oil Co. Chipotle Olive Oil
  • 1/2 medium yellow onion, thinly sliced (about 3/4 cup)
  • 1lb Salmon
  • Salt and freshly ground black pepper
  • 2 cloves garlic, minced
  • 1/3 cup Pinehurst Olive Oil Co. Peach Balsamic Vinegar
  • 1 Tbsp Honey
  • 2 cups sliced firm, but ripe Peaches (about 2 medium)
  • 1/4 cup thinly sliced Basil

Instructions

  1. Preheat oven to 400 degrees F.
  2. While oven is preheating, heat Chipotle Olive Oil in a large skillet over medium-high heat. Add onion and sauté 3 minutes.
  3. Add the garlic and sauté for 1 minute. Add the Peach Balsamic Vinegar and mix well.
  4. Add the honey and mix to combine; season with Salt & Pepper, then push the mixture to the sides of the skillet.
  5. Add the Salmon to the pan, topping the salmon with some of the onion mixture from the skillet.
  6. Add the Peach slices around the salmon and transfer the skillet to the oven; cook for 15-20 minutes, or until the Salmon is flakey.
  7. Remove the skillet from the oven when done. Top with fresh basil and serve warm.
