Ingredients

Scale

12–16 Corn Tortillas (makes about 6–8 total)

2–3 Chicken breasts or tenders, cut into strips & marinated in Persian Lime Olive Oil

2 Peppers, sliced

1 Onion, sliced

Salt Sisters Mojo Seasoning

Cheddar cheese, shredded

Greek yogurt (or sour cream)

Cilantro, to taste

Hot sauce (optional)

Instructions

  1. Shred cheese & slice peppers and onions
  2. Set up a griddle (same griddle you’d use for pancakes)
  3. In a large frying pan, heat Persian Lime Olive Oil & saute chicken pieces until fully cooked
  4. Add in peppers & onions & cook until al dente. Sprinkle all with Mojo as needed, then set all aside
  5. Heat griddle to 350 degrees
  6. Once heated, drizzle with Persian Lime Olive Oil
  7. Place corn tortillas on the griddle then top with chicken, peppers, onions & shredded cheese. Add a tortilla to the top
  8. Once cheese gets melty & bottom tortilla browns, flip the quesadilla. Continue cooking until desired doneness – I like mine nice & crispy, about 6-8 minutes per side. Add more olive oil as needed.
  9. Continue until all tortillas have been made
  10. Plate, then top with greek yogurt, cilantro & hot sauce

Enjoy!
