The combination of black peppercorn, coriander, garlic, lemon peel, allspice, fennel, thyme, rosemary, bay leaves is heady, light, and supremely savory. You don’t have to use it for just for brining, either—it would be great scattered over vegetables or mixed into chicken soup.
