Description
- 1 ½ pounds thinly sliced chicken breasts
- 2 T Pinehurst Olive Oil Co. Cilantro and Onion Olive Oil
- 1 package of Romaine, chopped
- 2 cups of strawberries, chopped
- ½ cup dried cranberries
- 1/2 cup sliced red onion
- 4 oz. goat cheese, crumbled
- ¼ cup honey roasted walnut pieces (or any nut of choice)
Dressing
- 1 cup strawberries
- ¼ cup Pinehurst Olive Oil Strawberry Balsamic Vinegar
- ¼ cup Pinehurst Olive Oil EVOO
- 1 T Dijon mustard
- 1 clove of minced garlic
- ¼ tsp salt
- ¼ tsp pepper
- 1 tsp poppy seeds
Ingredients
- Heat Cilantro Olive Oil in a pan over medium heat
- Cook the chicken for 2 minutes on each side, can be done in batches if needed
- Chop the romaine and put in salad bowl.
- Top with Cooked chicken and remaining salad ingredients.
- For Dressing: add ingredients to a food processor until smooth.
- Drizzle homemade dressing over salad and enjoy!
