Strawberry Chicken Salad

Description

  • 1 ½ pounds thinly sliced chicken breasts
  • 2 T Pinehurst Olive Oil Co. Cilantro and Onion Olive Oil
  • 1 package of Romaine, chopped
  • 2 cups of strawberries, chopped
  • ½ cup dried cranberries
  • 1/2 cup sliced red onion
  • 4 oz. goat cheese, crumbled
  • ¼ cup honey roasted walnut pieces (or any nut of choice)

Dressing

  • 1 cup strawberries
  • ¼ cup Pinehurst Olive Oil Strawberry Balsamic Vinegar
  • ¼ cup Pinehurst Olive Oil EVOO
  • 1 T Dijon mustard
  • 1 clove of minced garlic
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 tsp poppy seeds

Ingredients

  1. Heat Cilantro Olive Oil in a pan over medium heat
  2. Cook the chicken for 2 minutes on each side, can be done in batches if needed
  3. Chop the romaine and put in salad bowl.
  4. Top with Cooked chicken and remaining salad ingredients.
  5. For Dressing: add ingredients to a food processor until smooth.
  6. Drizzle homemade dressing over salad and enjoy!
