Hearty Tuscan Lasagna Soup

Ingredients

1 pound lean ground beef
2 T Pinehurst Olive Oil Tuscan Herb Olive Oil 
1 cup white onion, chopped
3 cloves garlic, minced
2 tablespoons Salt Sisters Tuscan Farmhouse Blend (sold in store)
½ teaspoon red pepper flakes
6 cups beef broth
1 (15-ounce) can tomato sauce
1 (15-ounce) can diced tomatoes
1/2 bag any Sicilia brand pasta from Italy (sold in store)
½ cup heavy cream (optional)   

For Serving

½ cup parmesan cheese, grated
2/3 cup whole milk ricotta cheese
¼ teaspoon salt
½ cup fresh basil, chopped


Instructions

  1. Heat ground beef over medium heat in a Dutch oven. Use a spatula to break up beef into small crumbles. Cook until ground beef is done. Remove from pot.
  2.  Add Tuscan Herb Olive Oil over medium heat and add onion. Cook for 3 minutes, add garlic and red pepper flakes and cook for 1 minute or until fragrant.
  3. Add the ground beef back to the pot and add Tuscan Farmhouse Blend seasoning. Stir well to incorporate seasoning and onion mixture.
  4. Add beef broth, tomato sauce and diced tomatoes. Bring to a boil. Add pasta and cook for 10 to 12 minutes, or until tender.
  5. Once pasta is cooked, remove pot from heat and add heavy cream.
  6. While soup cooks, stir together ricotta cheese, parmesan cheese, and salt in a small bowl. Chop basil.
  7. Ladle soup into bowls and top with dollops of cheese mixture and fresh basil.
