
Warm Lentil Herb Salad
Ingredients
Herbes de Provence Olive Oil
Salt Sisters Herbes de Provence (sold in store)
1 can chickpeas, drained & rinsed
About 1 cup kale
About 1/2 cup sun dried tomatoes, marinated in Herbes de Provence Olive Oil
1 can lentils, drained & rinsed
1/2 lemon, squeezed
About 1/2 cup fresh mozzarella, cut into cubes
Fresh dill
Instructions
1. Marinate sun dried tomatoes in Herbes de Provence Olive Oil & Herbes de Provence seasoning
2. Drizzle Herbes de Provence Olive Oil in a large frying pan
3. Add chickpeas to frying pan & saute for 2-3 minutes, add Herbes de Provence seasoning, to taste
4. Add Kale to frying pan & allow it to start wilting before adding the sun dried tomatoes
5. Once kale has completely wilted & sun dried tomatoes are sauteing, add lentils & squeeze 1/2 a lemon into the mixture
6. Stir frequently, be mindful to not overcook the lentils & add mozzarella. Stir mozzarella into the mixture, for about a minute. Pull the frying pan off the burner (you don’t want the cheese to melt)
7. Add dill & enjoy!
