Broccolini and Chickpea Salad w/ Lemon Dressing

- Broccolini bunch, cut lengthwise into thin pieces
- 1.5 TBSP Pinehurst Olive Oil Lemon Olive Oil
- 1.5 TBSP Pinehurst Olive Oil Sicilian Lemon Balsamic Vinegar
- 2 small cloves garlic, minced
- 1 tsp Runamok Sugarmakers Cut maple syrup (sold in store)
- 1/4 tsp paprika
- salt + pepper to taste
- 1/2 cup crumbled feta
- 1/3 cup pickled red onions
- 1 can (15oz) chickpeas, drained & rinsed
- Sliced almonds
Instructions
- Bring a large pan to medium-high heat. Drizzle Lemon Olive Oil to the skillet, add broccolini & season with salt and pepper. Cook for about 5-8 minutes, tossing occasionally.
- Remove from pan and let cool slightly.
- Meanwhile, mix together the olive oil, Sicilian Lemon Balsamic, maple syrup, paprika, garlic, salt and pepper.
- Add in the chickpeas, feta, pickled red onions and the slightly cooled broccolini. Toss to combine.
