Ingredients

4 lbs chicken thighs, fat trimmed
1/2 cup red wine vinegar
1 cup large pitted prunes
1 cup Castelvetrano Olives
1/2 cup capers
4 bay leaves
1 1/2 heads garlic cloves, minced
1/4 cup dried oregano
Salt & pepper, to taste
1/4 cup light brown sugar
1 cup dry white wine (Sauvignon Blanc worked great for this!)
Wild rice, prepared per instructions

Instructions

  1. Mix everything together EXCEPT chicken, brown sugar and white wine
  2. Marinate chicken overnight
  3. When ready to cook, preheat oven to 350
  4. Place chicken in a large baking dish then pour marinade over the chicken
  5. Sprinkle brown sugar on top of mixture then slowly pour white wine between the chicken thighs
  6. Bake for 45-55 minutes or until chicken reaches 165 degrees
  7. Prepare wild rice while chicken is baking
  8. Plate wild rice then add chicken & mixture
Pour a smokey glass of wine (like South African Pinotage) & enjoy this SUPER delicious blend of unique flavors!
