Chicken Marbella
Ingredients
4 lbs chicken thighs, fat trimmed
1/2 cup Garlic Olive Oil
1/2 cup red wine vinegar
1 cup large pitted prunes
1 cup Castelvetrano Olives
1/2 cup capers
4 bay leaves
1 1/2 heads garlic cloves, minced
1/4 cup dried oregano
Salt & pepper, to taste
1/4 cup light brown sugar
1 cup dry white wine (Sauvignon Blanc worked great for this!)
Wild rice, prepared per instructions
Instructions
- Mix everything together EXCEPT chicken, brown sugar and white wine
- Marinate chicken overnight
- When ready to cook, preheat oven to 350
- Place chicken in a large baking dish then pour marinade over the chicken
- Sprinkle brown sugar on top of mixture then slowly pour white wine between the chicken thighs
- Bake for 45-55 minutes or until chicken reaches 165 degrees
- Prepare wild rice while chicken is baking
- Plate wild rice then add chicken & mixture
Pour a smokey glass of wine (like South African Pinotage) & enjoy this SUPER delicious blend of unique flavors!
