Garlic Roasted Sheet Pan Potatoes

Ingredients

  • 1 lb marble potatoes, washed. For larger potatoes, half or cut into smaller sizes
  • 2 T Pinehurst Olive Oil Co. Garlic Olive Oil
  • 1 T fresh thyme
  • 1 T fresh chopped basil
  • ½ cup pitted kalamata olives halved
  • 12 cups cherry tomatoes halved
  • 3 oz. fresh mozzarella cheese cut into fourths
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 450 degrees
  2. Toss potatoes in Garlic Olive Oil, then spread on baking sheet and season with salt and pepper
  3. Bake for 30-40 minutes, or until tender and desired doneness
  4. For the last 10 minutes of roasting, add olives, tomatoes, basil and thyme 
  5. Remove from oven and transfer to your serving dish. Add the mozzarella to the dish while the potatoes are still warm.
  6. Serve and enjoy! This is a perfect side dish for to chicken or fish.
