Homemade Olive Oil Mashed Potatoes

Ingredients

  • 8 small Yukon Gold Potatoes
  • 1/3 cup Pinehurst Olive Oil Co. Butter Olive Oil
  • ½ cup Milk
  • 5 ½ tsp. Salt, use 1 ½ tsp for boiling water and the remaining 4 tsps. for seasoning potatoes
  • 1 ½ tsp. Pepper

Instructions

  1. Halfway peel the potatoes leaving some skin on the potatoes, then cube the potatoes.
  2. Boil in salted water until soft.
  3. Add milk, Butter Olive Oil, salt and pepper and blend with an emulsion blender. Add more salt and pepper to taste if needed.
  4. Serve and enjoy!
