Lentil Salad with Lemon Olive Oil Dressing

For the Salad
- 1/2 bag of Lentils of choice
- 1/2 red bell pepper
- 1/2 Orange or yellow bell pepper
- 1/2 green pepper
- 1 cup of cherry tomatoes
- 1/2 English cucumber
- 1/2 red onion
- 3 TBSP fresh parsley
For the Dressing
- 1/3 cup Pinehurst Olive Oil Lemon Olive Oil
- 1 clove grated garlic
- 1/4 cup tahini
- 2 Tablespoons Pinehurst Olive Oil Tarragon White Balsamic Vinegar
- Juice of 1 lemon
- 1 teaspoon ground cumin
- 1 1/2 teaspoon salt to taste
- 1 teaspoon ground black pepper
Instructions
1. Rinse the lentils thoroughly. Add the lentils to a pot and completely cover with water. Bring to a boil and reduce the heat to medium. Cook according to package. Drain and let cool slightly.
2. In a large bowl, add the cooked lentils, chopped veggies, and parsley. Mix to combine.
3.Add the dressing ingredients to a bowl and whisk thoroughly. Pour over salad, toss to combine.
