Persian Lime Baked Chicken

Ingredients

  • 4 tablespoons Persian Lime olive oil

     

  • 2 teaspoon grated lime zest

     

  • 2 tablespoons lime juice

     

  • 1 teaspoon ground cumin

     

  • 1 teaspoon ground coriander

     

  • 1 teaspoon chili powder

     

  • 1 teaspoon salt

     

  • 2 pound boneless, skinless chicken thighs (8 pieces)

     

  • 6 medium scallions, cut into 1-inch pieces

     

  • 1/4 Cup chopped fresh cilantro

     

  • Lime wedges for serving


Instructions

  1. Preheat oven to 350 degrees. Combine oil, lime zest, lime juice, cumin, coriander, chili powder and salt in a large sealable plastic bag. Add chicken; seal the bag and massage to coat the chicken. Let stand at room temperature for 15 minutes.

  2. Remove chicken thighs from marinade and place them into a baking dish. Bake for 25 minutes.

  3. Remove from oven and add scallions to baking dish.Bake for 8 more minutes or until chicken is 165 degrees
    Note: we shredded the chicken and used it in burritos and taco bowls 🙂
