Persian Lime Olive Oil Cake with Coconut Glaze
Ingredients
For the Cake:
1 21 oz. bag of Classic Olive Oil Cake Mix (sold exclusively at Pinehurst Olive Oil)
3 Large Eggs
1 1/3 Cup of Pinehurst Olive Oil Persian Lime Olive Oil
1 1/4 Cup of Milk
For the Glaze:
2 cups sifted powdered sugar
2 T milk or half and half
2 T Coconut Balsamic
1/2 Cup Coconut Flakes (optional)
Note: you will need a 9- or 10-inch springform pan
Instructions
For the Cake:
Follow instructions on the Classic Olive Oil Cake Mix
For the Glaze:
Add together all the ingredients for the glaze and whisk until the powdered sugar dissolves
If it is not the consistency that you want, add more liquid of choice (milk, half and half or coconut balsamic)
**We added dried coconut flakes to the top of cake and garnished with limes
This is absolutely delicious!
