Strawberry Balsamic Chicken
Ingredients
- 3 boneless, skinless chicken breasts
- 1/2 pint fresh strawberries (for garnish)
- Feta, to taste
- Fresh basil, to taste
Ingredients for the marinade:
- ¼ cup Dark Strawberry Balsamic Vinegar
- 2 tablespoons honey
- ½ cup low‑sodium chicken broth
- 1 tablespoon Dijon mustard
Instructions
- In a shallow dish combine ½ cup chicken broth, ¼ cup balsamic vinegar, 2 tablespoons honey, 1 tablespoon Dijon mustard, ½ teaspoon sea salt, and ¼ teaspoon black pepper.
- Whisk until smooth
- Add the chicken breasts. Turn to coat evenly, cover & refrigerate for at least 15 minutes (or up to 4 hours) to let the flavors penetrate the meat
- Throw them on the grill & serve with a vegetable and/or a salad!
